Description Ingrédients Suggestions d'utilisation

Quite rare, the Batak berry originates from the north of Sumatra island. Harvested by the eponymous people, it resembles Timut, Sichuan, or Sansho berries, but is distinguished by its small size and its growth in clusters hanging from small branches.

This berry holds up well to cooking, but it will retain more of its flavor if it is added at the end of cooking.

Applications

It can be used in many dishes: fish and seafood dishes in general (shrimp, prawns, etc.), marinades, sauces, broths, stews, vinaigrettes, teas and infusions, and in desserts (fruit salad, tarts, chocolate desserts, etc.).
