Nutmeg is a spice that was used long before our era in the Moluccan archipelago, on the Banda Islands in Indonesia, as well as in India and China.
Nutmeg, like mace, is a precious spice; they are among the most expensive spices in the world. They are cultivated in Indonesia, India, Latin America, and Sri Lanka.
Nutmeg is used as a spice to flavor potato-based dishes, meats, béchamels, soups, gratins, savory tarts, quiches, vegetables, and certain cocktails. It is often associated with rich dishes for its taste qualities and its digestive properties.
To flavor desserts, nutmeg pairs well with fruity desserts such as apple and pear compotes, and generally with cold-weather fruits. As during Christmas, where it is found with gingerbread.
Nutmeg is part of the composition of many spice blends such as curry, ras el hanout, or colombo.
The taste of nutmeg is quite strong, yet it is not spicy. You can sprinkle it into all your preparations, but usually sparingly; a pinch will suffice.
