In Southern Italy, the word "Zita" refers to the bride, which is why this format is traditionally associated with weddings and is the star of the feast.

Tradition dictates that Zita, characterized by its significant thickness and rough texture, be hand-cut into irregular pieces before being placed in the pot for cooking.

Zita is suitable for baked recipes or pasta dishes garnished with thick and colourful sauces, meat or fish, enriched with vegetables, or strong cheeses such as pecorino, provolone, or caciocavallo.

They can also be served with vegetable sauces made with tomato sauce and the addition of vegetables such as peppers, aubergines, and courgettes.
