In Japan, yuzu is traditionally used in ponzu (a sauce made from soy sauce, vinegar, sugar, salt, and yuzu) or in miso. It can be used in fish dishes or as a substitute for lime. In pastry, it pairs deliciously with Matcha green tea.
The fruits are washed, dried, pressed, stripped of their segment membranes, then cut, cold-dried, and ground into powder.
