Erstein Trimoline is composed of equal partsfructoseand glucoseresulting from the hydrolysis of sucrose. This partially crystallized invert sugarsyrup is obtained by total hydrolysis of sucrose. Its high dry matter content and the presence of microcrystals give it a pasty appearance. Trimoline is used as a technological ingredient, possessing specific properties such as anti-crystallization, high sweetening power, improved preservation, enhanced coloring of baked goods, freezing point depression, etc. Trimoline is used in a wide variety of applications, such as yellow cakes, viennoiseries, soft candies, buttercreams, soaking syrups, etc.
