Ponthier has selected Williams pears from a fifty-year-old orchard in Provence, cultivated with love and expertise for several generations. Benefiting from generous sunshine, these fruits ripen slowly to offer sweet, sugary flavors, enhanced by delicate floral aromas.

Crafted with care, this compote reveals a soft, slightly granular texture that is both melting and thirst-quenching, fully respecting the nature of the fresh fruit. The gentle processing preserves all the freshness and authenticity of the pear.

Ingredients

Pear (fruit and cooking juice) 98.2%, Sugar 1.5%, Thickener: carob bean gum

Ready to use and 100% natural, this compote is a perfect accompaniment for inserts, tarts, entremets, frozen desserts, or plated desserts.

Storage before defrosting: 30 months at -18°C
Defrosting: 2 to 3 days between 2°C and 4°C
Storage after defrosting: 10 days between 2°C and 4°C

After defrosting, stir until smooth with a rubber spatula.

After light stirring, the compotes can be used directly for verrines, or to marble a mixture, sorbet, or ice cream. For other applications such as gelled inserts, they must be textured hot or cold.
