Suggestions d'utilisation

Ponthier has selected the Willamette raspberry, grown at high altitude in the heart of Serbia by committed family farms. These fruits are hand-picked, then processed immediately after harvesting to preserve their freshness and aromatic intensity. The compote has a juicy texture, enhanced by the natural crunch of the seeds, for a tasting experience that is both lively and authentic.

It reveals a fruity and refreshing flavor, typical of this variety with its tangy profile.

Ingredients

Raspberry 92%, Sugar 6.9%, Thickener: locust bean gum

It is ideal for inserts, desserts, ice creams, tarts, or verrines. A gourmet, technical solution that remains faithful to professional requirements.

Thawing: 2 to 3 days at 2°C to 4°C
Shelf life after thawing: 10 days between 2°C and 4°C
After thawing, homogenize with a rubber spatula.

After light homogenization, the fruit compotes can be used directly for verrines, or to marble a mixture, sorbet, or ice cream. For other applications such as gelled inserts, they will need to be texturized while hot or cold.
