Description: In Japan, buckwheat seeds (soba in Japanese) are mainly used to make sobacha, a caffeine-free and calorie-free infusion known for its antioxidant properties. Roasted buckwheat is also often incorporated into pastries and other desserts. The buckwheat seeds here are crushed for faster infusion and easier incorporation into pastry.

Flavor: A crunchy texture and a roasted aroma that reveals a much smoother and rounder taste on the palate, with a certain length.

Ingredients

100% Buckwheat

For ahot infusion,use 2 teaspoons of buckwheat per cup and steep for 1 to 2 minutes.

For acold infusion, use 4 teaspoons per liter of hot water, steep for 1 to 2 minutes, then let cool. Sobacha can also be used to make other drinks (lattes, dalgona) or to flavor rice while cooking.

The crushed texture of these buckwheat seeds makes them easier to incorporate into desserts: crème brûlée, warabi mochi, pudding, ice cream, etc.
