Atomized glucose syrup has a slightly sweet taste and a syrupy texture obtained from the hydrolysis of wheat starch. Atomized glucose syrup is mainly incorporated into yourice cream productionbut can also be used in biscuits andconfectionery(nougatine, marshmallow,...). It improves texture, reduces the sweetness of the preparation, and increases shelf life. Be careful not to confuse it, as it is not used for the same recipes as glucose syrup, since it sweetens without adding moisture. In addition, it improves the mouthfeel during melting. The recommended dosage is approximately 4% of the total weight of the preparation.
