Piccalilli sauce contains pieces of vegetables in a thick preparation. The color is ochre yellow with small dark spots corresponding to the spices. The smell is vinegary and slightly spicy, reminiscent of sweet mustard. Its aroma is powerful but not aggressive, as it is both acidic and sweet. Chicken fillets and Belgian fricadelles with piccalilli are certainly the two most famous dishes that make abundant use of this product. Then you will find Iberico pork fillet with piccalilli sauce and fresh tomatoes, and the pork tenderloin with piccalilli recipe, which will surprise you with the richness and gourmet quality of their flavors.
