Canned sardines are preserved in refined rapeseed oil, which completely covers them. They are cleaned of their heads, gills, caudal fins, and all viscera except for the roe, milt, and kidneys. With a normally fresh smell and a pleasant characteristic taste, the sardines are of a reasonably uniform size and are well arranged in the can. Easily separable, of typical color, and free from defects (tissue yellowing), the sardines have clear or pinkish flesh, of a normal consistency, neither fibrous, soft, nor spongy. After draining them, you can enjoy them on their own or cook them as you wish: in sardine rilletteswith a potato and onion salad, etc. Here's a gourmet recipe that your guests will surely love: crumble the sardines, add cream cheese, minced shallots, and chopped chives.
