Bomba rice is the most recent variety to have received the Arroz de Valencia designation of origin. It is a pearl-like rice, a cross between the Sénia and Bomba varieties, which offers excellent water absorption capacity and perfectly resists the grain from bursting during cooking. This results in an airy rice with a soft and creamy texture, making it excellent for preparing paella and other typical Valencian dishes.
