Frozen melon puree is obtained by crushing and refining fruit, from selected and blended varieties to guarantee a smell, color, and flavor typical of fresh fruit. It offers a homogeneous texture free from bitterness and acidity. The product is surprising for its great olfactory intensity, its beautiful length on the palate, and its aromatic richness. As essential in pastry as for your sweet/savorydishes, its moderately sweet flavor will delight you and impress your guests. For total optimization of the melon puree, Les Vergers Boiron recommends thawing the product in its original, closed packaging, for a minimum of 24 hours at +2/+4°C. If necessary, you can also thaw the product in its original packaging in a bain-marie or microwave at moderate temperature.
