For its purée production, Maison Ponthier has selected the prestigious Alphonso mango from Ratnagiri. Mangoes from this region are reputed to be among the best in the world, and the Alphonso variety is the most prized among dozens of others. The coastal region of Ratnagiri guarantees excellent fruit quality thanks to high humidity and soil that is both acidic and very rocky. In Maison Ponthier's partner plantations, trees are abundantly irrigated as soon as the fruit reaches the size of a grape, with nearly 50 liters of water per day per tree. Strict control of the mangoes' Brix level allows for harvesting at full maturity. Small in size, highly concentrated in sugar and pigments, they are perfectly fragrant, fleshy, and non-fibrous.

For the preparation of mousses, Bavarian creams, entremets, sorbets and ice creams, fruit jellies, cocktails and fruit juices, smoothies, and siphon mousses.
