The lychees selected by Maison Ponthier are harvested from old trees located in the Tamatave region, on the east coast of the island. The soil of Tamatave is ideal for growing lychees: an orange, very rich soil and a distinct tropical climate with heavy rainfall during the austral winter and high temperatures the rest of the year. After harvesting, the fruits are selected according to very strict specifications. Each cluster is then carefully peeled by hand to preserve all the qualities of this particularly soft and delicate flesh, which releases flavours of rose and muscat.
