Raspberry Puree - 1Kg

Maison Ponthier has chosen to combine two raspberry varieties to obtain a taste that is both intense and perfectly balanced. The Willamette variety provides a pronounced, tart aroma and a high Brix, while the Meeker variety adds roundness and depth. The latter, being more delicate, is very sensitive to climate changes (temperature, precipitation). Thus, Maison Ponthier's partner producer has developed high-altitude cultivation between 300 and 1000 meters, exclusively on hillsides. To eliminate any bitter notes, the achenes are removed during the puree processing, ensuring that only the fruit pulp remains.

For preparing mousses, bavarians, entremets, sorbets and ice creams, fruit jellies, cocktails and fruit juices, smoothies, and siphon foams.
