Lime Puree - 1Kg

Lime is a tropical citrus fruit from the lime tree, a tree of the large rutaceae family. Its rind is thin and smooth, dark green, the essential oil it contains is aromatic, its flesh with green highlights is juicy and acidic. Its acidity allows, among other things, to cook tartars, ceviches and fish carpaccios. Very sensitive to cold, lime is grown only in regions with a tropical climate. It is therefore in Mexican lands that Maison Ponthier has decided to source its lime. Mexico, the main producer of limes with Brazil, offers very aromatic and deliciously fragrant varieties.

For the preparation of mousses, bavarois, entremets, sorbets and ice creams, fruit jellies, cocktails and fruit juices, smoothies and siphon mousses.
