Whole voatsiperifery pepper - 150g

Voatsiperifery is a vine whose name comes from the Malagasy voa meaning "fruit" and tsiperifery, "plant". This pepper has small, oval-shaped berries of a dark brownish-black color, with an opaque white core and slight light red highlights. When aerated, the nose expresses, on a fruity background, strong notes of burnt herbs and turpentine enveloped by powerful woody aromas (sandalwood and cedar). The attack is moderately spicy and presents a rather frank and sharp acidity that makes this pepper refreshing with its mentholated and toasted notes. Very complex, voatsiperifery pepper is the ideal ally for dishes that need to be enhanced by the freshness of a tangy spice. It is best used just before tasting your dish, ground not too finely, to preserve its aromatic finesse.
