Originating from the mountains of Laos and northern Vietnam, Medelys Mac Khen berries, also known as mountain berries, are a rare spice belonging to the same botanical family as Chinese Sichuan and Japanese Sansho.
They offer a unique aromatic profile blending mandarin, candied grapefruit zest, lemongrass, and smoked tea, highlighted by a slight menthol freshness.
On the palate, the attack is fresh and slightly tart, leaving a sensation of peppery citrus dominated by lime.
Traditionally used in Laotian and Vietnamese cuisine, especially in sauce with lemongrass, ginger, and chili grilled chicken, they bring an original aromatic signature to many culinary creations.
Application tips
Grind or crush the berries at the last moment to preserve their aromatic complexity. They can be combined with other peppers, such as cubeb pepper, to create signature blends.
- Seafood: crushed in a mortar to season a scallop carpaccio, steamed white fish, or a shellfish broth.
- Meats: ideal as a finishing touch on roasted lamb, guinea fowl, pigeon, or veal chop. It can also be included in a marinade with lemongrass, ginger, and chili.
- Vegetables: enhances steamed or roasted vegetables (fennel, caramelized endives, mushrooms).
- Cheeses: a few crushed berries on fresh goat cheese with a drizzle of olive oil.
