Originating from northeastern India, long pepper still grows wild on the foothills of the Himalayas. This Javanese long pepper comes in the form of slender, almost blackish-brown spikes, compact and rigid, about 4 to 5 centimeters long. The nose immediately expresses strong sweet notes, marked by captivating scents of cinnamon and nutmeg over a more burnt caramel-chocolatebackground. On the palate, this warm and pungent pepper delivers a burning sensation that fades after a few seconds. Despite the initial bite, the overall impression remains quite velvety, with a flavor of bitter cocoa and roasted chicory. This long pepper, with its great aromatic complexity, harmonizes wonderfully with sweet and savorypreparations. Its roasted aromas, as well as its smooth and creamy texture, also allow it to "stand up to" the bitterness of dark chocolate with a high cocoa content.
