Sichuan berries belong to the Zanthoxylum piperitum family, so they are not truly a pepper. Originating from one of the mountainous regions of Central China, this berry is obtained after drying and extracting the husk surrounding the fruits of the Sichuan pepper tree.
For culinary use, we recommend toasting the berries for about 2 minutes in a pan to release their aromas. However, they should be added at the end of cooking to your dishes.
Applications
They enhance all white meats, such as pork and lamb, as well as red meats, such as beef. Despite its spiciness, it is quite versatile when used sparingly.
This pepper will quickly become essential for your seafood, especially shellfish.
