Cubeb pepper, also known as "tailed pepper," is obtained from berries harvested before maturity, dried, and ground. While it originates from wild vines, it is now cultivated in various tropical countries in Southeast Asia. The nose immediately expresses, with great voluptuousness, a mentholated aromatic palette where one can detect notes of camphor, turpentine, and burnt cedar. The attack is suave and slightly biting, with acidic flavors that leave an astonishing freshness of menthol and camphor.

The nose immediately expresses, with great delight, a mentholated aromatic palette where notes of camphor, turpentine, and burnt cedar can be discerned. The attack is suave and slightly piquant, with tartflavors that leave an astonishing freshness of mentholand camphor. It is best used freshly ground just before tasting a bo-bún, a fish or lobster in broth with citrus, or even a chocolate-mint dessert. Be careful not to heat it too strongly so that it does not release too much bitterness.
