The combination of climate and soil characteristics (terroir) of Les Baronnies, together with a variety, the TANCHE, which thrives only in this land, produces a very distinctive olive.

This distinctiveness is reinforced by over 25 centuries of expertise, passed down from generation to generation, in both olive tree cultivation and olive preparation methods.

The Nyons black olivefrom the Nyonsolive®range, is harvested at full maturity, slightly wrinkled by the first cold weather and the dry air.

At this stage of ripeness, the natural bitterness of the olive has significantly decreased and is eliminated by ancestral natural processes: immersion in a 10% fine salt brine for a minimum of 6 months. Then, by osmosis, the salt penetrates the olive and the bitterness dissipates in the salty water, and the coloring matter is partially extracted. The Nyons olive offered to consumers therefore has a dark brown color, known as "monk's habit".
