Linguine are the typical long pasta shape from Liguria: they are shaped like small, flat, narrow tagliatelle and were created to accompany traditional pesto.

Their flattened shape and slightly rounded form allow them to capture seasonings and release their full variety of flavors.

They are excellent with butter and sage or fresh tomato sauces enriched with vegetables and herbs, or with spicy sauces prepared at the last minute with extra virgin olive oil, garlic, chili, anchovies, and capers.

This type of pasta pairs perfectly with fish sauces containing shellfish and seafood, and "white" sauces prepared with cream, mascarpone, soft and melting cheeses, and a touch of spices such as saffron, horseradish, and ginger.
