Gel Sphère by Louis François is a solution that allows for the creation of spheres with a liquid center, as well as gel sheets for decorating plated desserts.

Ingredients

Maltodextrin, potassium chloride (E508), carrageenan (E407), locust bean gum (E410)

Reverse Spherification and Veils

Dosage:

4 to 5% of the total mass.
Freeze the preparation to be spherified at -18°C.
Mix Gel Sphère with sugar and mix the powders with water.
Bring to a boil, then let cool to about 70°C. Skewer the frozen core and dip it into the bath.
Gently place the sphere on a support and let it thaw completely.
Veils: pour directly after boiling
