The carving is done "cold" to achieve a beautiful potency and a good length on the palate. When tasting the 2-leg duck confit, you will feel the full maturity of the meat of these ducks.

The duck confit contains 2 legs surrounded by solid, yellow duck fat. Raised in small batches of 400 ducks on average on large grassy pastures, Barthouil ducksare then force-fed whole "grain" corn for 14 days. The butchering is done "cold" to achieve a beautiful intensity and a good length on the palate. When tasting the 2-leg duck confit, you will experience the full maturity of the meatof these ducks. Ready to use, simply immerse the jar in hot water to melt the fat and easily remove the duck pieces. In a hot pan, grillskin-side down, then reheat meat-side up. Finally, serve the legs with sautéed potatoes or beans cooked in duck fat. Enjoy your meal!
