Cloves are used in cooking to flavour broths, marinades, poached meats, stews, preserves, vinegars, as well as cured meats (blood sausage, sausages, pâtés) and desserts. They are often found "studded" in an onion for broths, added to pickles, pastries, and also in mulled wines alongside cinnamon.
Note: They are a component of some spice blends such as "ras el hanout" and Chinese "five-spice", as well as curry.
