Tradition Royal Caviar comes from the white sturgeon, a species native to the Pacific Ocean found from Alaska to Baja California. This sturgeon is among the longest-living, reaching up to 100 years of age, weighing 800 kg, and measuring 6 meters in length. It is particularly valued, in addition to its lean, high-protein flesh, for its abundant production of large eggs, 2.8 to 3.2 millimeters, characterized by a coloration that varies from dark gray to black.
Its caviar is perfectly balanced and round in taste, recalling the sea only in its most delicate components. It satisfies the most demanding palates of all ages worldwide thanks to its gourmand notes, typical of pastry.
