Pink peppercorns get their name from their beautiful, intense, and shiny red color. Originally from a tree inSouth America, which was then exported to Reunion, Mauritius, and Madagascar, Médelys pink peppercorns are reminiscent of coriander, burnt juniper, crushed blackcurrant leavesand bitter almond aromas. Sweet and sugary on the attack, then evolving into notes of turpentine, burnt fir, and ripe red fruits. Pink peppercorns cannot withstand cooking at too high a temperature; they are ideal for infusion in a cream, heated over low heat, for example. Their flavor pairs wonderfully with marinated wild salmon, roasted langoustines, braised milk-fed veal, or a citrus salad.
