These orange-red seeds have strong notes of candied citrus,lime, and kumquat. After afew minutes of oxidation, sweeter aromas of caramelized grapefruit anddried exotic wooddevelop. It is best tofinely grind the berries in a mortarjust before tasting grilled sea bass cutlets, stuffed zucchini flowers, or squid, for example. Be careful not to heat them to a very high temperature so as not to make them too bitter.
