Cantabrian Sea anchovies are purchased directly from fishing boats, selecting only the freshest and optimally sized anchovies.
These are salted and packed in traditional tins and dried for at least 12 months. The anchovy fillets are prepared by hand and in a traditional way.
The preparation of a good anchovy requires three main factors: a long maturation period under controlled temperature, the salted anchovies must be properly washed to achieve the right degree of salinity and, finally, they must be boned "conscientiously" to get rid of all the bones.
The Yurrita cannery is a family business founded in 1867. In its early days, it produced and sold marinated and salted fish distributed from Mutriku to the rest of Spain. The original cannery started its work in the basement of the Yurrita family home, and was known as Casa Mauleón. Among all the current Spanish canneries, it is probably the oldest building dedicated to fish canning.
