These candied chestnuts are tender and subtly flavored with vanilla. They are hand-picked in the autumn in Piedmont. They are then candied according to French tradition: wrapped in tulle muslins which are dipped in a vanilla syrup made with Bourbon vanilla pods from Madagascar. This is followed by glazing with an icing sugar syrup coating.
